Creating the Lind & Lime recipe.

When we were first devising Lind & Lime, it was the height of the gin boom in the UK, and it felt like a new wild and wonderful spirit was being launched every week. Nevertheless, we felt like there was a place for a new brand that could cut through the noise and deliver the very essence of what a London Dry Gin should be - a classic, benchmark gin. 

We did this by using just seven botanicals that deliver the quintessential flavours of a gin. 

We put juniper front and centre - it is afterall the defining characteristic of a gin. 

Underpinning this, we used the four classic ‘base’ botanicals: coriander seeds, angelica rood, orris root and liquorice root.

If there is another defining characteristic of a London Dry Gin, it’s citrus. We wanted to use limes because of their association with our port of Leith where we produce our gin.

Finally , it needed a final ingredient to counterbalance the juniper and lime and we did this with the gentle sweet spice of pink peppercorns. 

Using just seven botanicals is a challenge. There is nothing to hide behind - everything has to be perfectly tuned and work in careful harmony. Too much coriander seed and it can become soapy. Too much liquorice and it becomes sickly sweet. Too much lime and it goes cloudy. Too much pink peppercorn and it tastes strangely metallic. 

It took many iterations and almost a year of slow, careful development - a painstaking balancing act to find the perfect harmony between flavours. 

We made a spirit that we love. We’re incredibly proud of it, and we hope that you will love it too.
