Three key flavours:
Juniper
Juniper is the cornerstone of any true gin. It’s what makes gin gin. It evokes forest like imagery - fresh pine, juicy berries and earthy aromas.
Lime
Citrus is our signature top note not fruit pastel, confected lime, but zesty refreshing lime. We spend countless hours peeling our organic limes by hand leaving behind the pith and juice which we then use for cocktails on our tour.
Pink Peppercorns
Lime and juniper alone are not enough to create complexity in a balanced gin. We chose pink peppercorns because they have a little bit of everything, they have orange like citrus, warming spice and bursting with red fruits.
The Recipe
Process

Proportion our organic grain neutral spirit with water and six out of the seven organic botanicals (juniper, coriander, angelica, liquorice, orris root and pink peppercorns (day before production) mixing them together in our 1000 litre copper pot still. This is given 16 hours to macerate allowing the dry botanicals to rehydrate and imbue the spirit with flavour.
The following morning we load a large vapour basket with a couple of kilos of fresh organic lime peel. We heat the mixture of spirit and botanicals using 100% green electricity and over the course of 9 hours the rising vapour infused with the botanicals from the pot passes through the lime peel giving it a beautiful citrus top note. We condense the vapour back into spirit, capturing all of the flavour and aroma of fruit, pine and citrus.

After at least two weeks resting our gin is bottled in-house and hand-labelled with our plastic free-tamper seals that secures our natural cork in our entirely plastic free pack.
